Does the 60 watt transformer have a heat build up? Can it be located in an enclosed area?

Answer:Yes, like all transformers this one generates heat.
I would strongly recommend consulting an electrician familiar with local electric codes regarding the proper placement of the transformer in your installation. Generally transformers and the splices are stored in junction boxes in a readily accessible place.

Does this have knock outs to attach a type NM (romex) connector? I have type NM coming out of the wall under the cabinets.

Yes, it does. It's hard to see in the picture because of the white finish but there are knockouts on the end and two on the side.

Can the 6ft cord be shortened to the length needed, so that there's not a lot of extra cord?

The only issue is that this would void the warranty and likely the safety label.

How does this mount? Screwed to the underside of the cabinet?

Answer:This unit mounts using screws placed inside the cover through the back.
